Understanding Rice Wine

Rice wine, also known as sake in Japan, is a fermented beverage made from rice, water, and koji (rice culture). It's typically consumed warm, offering a unique balance of sweet, savory, and umami flavors. The alcohol content usually ranges between 14-17%.

Gathering Your Ingredients and Equipment

  • Short-grain rice (like sushi rice): It's sticky when cooked, which helps in fermentation.

Transfer the mash to your fermentation vessel. Cover it with a clean cloth and secure it with a rubber band. Attach your airlock or inflate your balloon. Let it ferment at room temperature (around 20-25°C/68-77°F) for 5-7 days, stirring daily.

After fermentation, strain the mash through a cheesecloth to separate the liquid (your rice wine) from the solids. Discard the solids. Pour the liquid into bottles or a demijohn, leaving some headspace for expansion. Seal with an airlock or cork.

Let your rice wine age at room temperature for at least a month, or up to a year for a more complex flavor. You can enjoy it chilled, at room temperature, or warmed gently.
