Umiya Sushi doesn't have a location in Chinatown but it is very close. It takes only five minutes to get from the Strip to Umiya via Uber. You can order from a simple menu. Koi offers sushi as well as sashimi in a variety f flavors like tuna and salmon, yellowtail, alacore, albacore shrimp, eel and crab, as well octopus, oysters, urchins, and toro. It's also delicious to eat the rolls. I loved the shrimp tempura, rainbow and vegetable rolls. Tokyo Boys is a great place to eat Japanese sushi in Henderson, NV. Henderson is part of the Las Vegas Metropolitan area. This hidden gem is well-kept by the city. The interior looks like it's a 1950s-style diner. But they have great sushi.

Yellowtail has sashimi (sushi), sushi rolls, tempura, and sushi. My favorite specialty roll is the Angry Salmon special, which includes salmon and avocado with serrano bell peppers, cucumber, and serrano peppers. Fresh omakase also can be ordered. Kaiseki Yuzu's Japanese restaurant changes its menu once a month. Similar to Sushi-Kame, they offer only two seatings: 5:30pm & 8:00pm. These are the only times when you can make a reservation. It is worth making a booking at least two days in advance.
