Ingredients
- 1 whole chicken (about 4 lbs)
- Salt and freshly ground black pepper, to taste
- 2 lemons
- 1 head of garlic
- 1 bunch of fresh thyme
- 1 bunch of fresh rosemary
- 4 tbsp olive oil
- 1 cup of white wine (optional)
Instructions
Preparation
Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and season it generously inside and out with salt and pepper. Stuff the chicken cavity with the halved lemons, garlic cloves, and sprigs of thyme and rosemary.

Roasting
Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken, breast side down, and cook until the skin is golden brown, about 5-7 minutes. Flip the chicken and cook for another 2-3 minutes. If using, add the white wine to the skillet and bring to a simmer.
Carefully transfer the skillet to the preheated oven. Roast the chicken until the juices run clear when you cut between a leg and the thigh, about 1 hour and 15 minutes to 1 hour and 30 minutes. If the chicken begins to brown too quickly, tent it loosely with aluminum foil.
Resting and Serving
Remove the skillet from the oven and let the chicken rest for 15-20 minutes before carving. This allows the juices to redistribute throughout the chicken. Carve the chicken and serve it with the pan juices spooned over the top. Enjoy!
