This feature is available in Microsoft Edge version 85 or later.By default, syncing user data in Microsoft Edge requires either a Microsoft Account or an Azure Active Directory (AAD) account and a connection to Microsoft cloud. The Edge profile is stored in the AppData folder which is migrated with Roaming Profiles, so by default, it should work.

I had success before with Chrome and Roaming Profiles + Folder Redirection without any special configuration. Configures the directory to use to store the roaming copy of profiles. If you enable this policy, Microsoft Edge uses the provided directory to store a roaming copy of the profiles, as long as you've also enabled the RoamingProfileSupportEnabled policy.

I tried to manually enter this registry key in HKCU>Software>Policies>Microsoft>Edge and when you launch Edge it does not load up the application unfortunately but it does create the folder "Edge" and "User Data" inside the Roaming AppData folders. So potentially Edge is just crashing because of this key.
