Italian Almond Cake and Almond Cookies

Italian Almond Cake and Almond Cookies

Serves: 8

Ingredients

  • 3/4 cup of margarine
  • 1 1/2 cups of sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons almond extract
  • 188 g All purpose flour
  • Topping:
  • 1 tablespoon sugar
  • 3/4 cup of SLICED almonds

Directions

Note: To make for Passover- for 1.5 cups flour (188 grams) you would use 1/2 cup matzo cake meal and 1/2 cup potato starch (total 1 cup)

Preheat the oven to 350 degrees.

Melt margarine

Pour melted margarine in a bowl and stir in sugar. Stir it.

Add eggs

Stir till creamy.

Add all other ingredients (but not the topping ingredients!).

Grease bottom and sides of pan, use a springform.

Spread the batter in the pan.

Sprinkle the almonds over the top and add sprinkle the sugar.

Bake for 40 mins.

My Notes

To make cookies- add 3/4 cup( 96 grams) additional flour and 3/4 cup ground almonds (or 1.5 cups flour) and 1 tsp baking powder. Use cookie scoop and put on cookie tray. Put one almond in middle of each cookie if desired. Bake at 350 for 12-13 minutes. Makes 24-28 cookies
