You’ll need:  • Chicken meat & bones  • Filtered water  • Veggies (onion, carrot, celery)  • Fresh herbs & garlic cloves (parsley, bay leaf, etc.)  • Sea salt How to:  1. Make a rich chicken meat stock — simmer chicken, bones, and veggies until tender.  2. Skim the scum, then add your herbs (trust me, add them after skimming).  3. Boil until the stock is very condensed.  4. Strain the liquid, but keep the chicken, herbs, veggies, and skin — toss the bones.  5. Pour the liquid back into a clean pot, add everything back in, and blend smooth (immersion blender or Vitamix).  6. Simmer a bit longer if you want it extra concentrated.  7. Pour into square molds or a tray, chill until firm, then cut or pop into cubes.  8. Freeze the cubes and store in a jar. I par freezed mine, because I didn’t have square molds that I could just put in the freezer. To use: Add 2 cubes to ½ cup water, boil for a minute, and sip!
