I got 10 pounds of ground beef about two and a half pounds of pork sausage. I'm just going to kind of break it up so all the ingredients can fall into place. Now we're going to do our veggies. I grab my mixer. Throw in my onion, celery, carrot. I have some garlic. We're also going to throw in one bunch of flat leaf parsley. That's going to be great for the aromatics. Now throw that on your mixer. Blend it till it's smooth. It's going to take a few minutes. Scrape down the edges. When it looks like that, throw it in. Now, we're going to use that same mixer. You don't even have to clean it. We're going to make a panad. This is going to help bind our meatballs. It's also going to hold the moisture in. So, we just break up some old bread, throw it right in there and we're going to get some milk and pour a little milk in there too. We want this to be kind of thick when we're all done. So, throw that on the mixer. Again, let it go for a few minutes. Let it really come together and we're going to pour that right into our meat as well. Now, it's time to start eggs. I got ten of them. Those go right in. We're going to add some Parmesan cheese. Hit that with our Italian seasoning. A big pinch of kosher salt, black pepper. Guys, these look good. We're going to start mixing. Now, you gotta mix these things for a while. I once watched a show on people that die when they climb Mount Everest and they said when they get near death, they start taking their clothes off because they're overheating. Well, apparently, that's the end stage of hypothermia. So, what you want to do is mix these meatballs to your hands are so cold, they start getting warm again. At that point, You know this is probably pretty close to mixed. Prepare to make some meatballs. So I like to get a little bit of water. Put it on my gloves. This helps keep it from sticking. Form some balls. I've been doing this for years so I know what size I don't need a scoop. I just make them by feel. They get very uniform so we're going to roll them all out. Throw them down on our pan. I got my oven preheated. 375 degrees. These things are going to cook for about 45 minutes. That's what they look like raw. They go in the oven. Guys, when they come out, check these things out. They shrunk just a little bit. They're absolutely beautiful. They've got some great color on em. Go ahead and break one open. Man, it smells amazing. It's super juicy. Just perfect. Take a bite. Just reminds me of the last couple decades of cooking, man. What a treat. So delicious. A little bit of pasta and some sauce.
