Craving something sweet but watching your blood sugar levels? You're not alone. Many people with diabetes can still enjoy treats like cake, as long as they're made with care and the right ingredients. Today, we're sharing a delicious, diabetes-friendly cake recipe that you'll love. Let's dive right in!

Understanding Diabetes and Baking

Before we get started, it's essential to understand how diabetes affects your body's response to sugar. Insulin, a hormone produced by your pancreas, helps your cells absorb glucose from the bloodstream. In people with diabetes, this process is disrupted, leading to high blood sugar levels. To manage diabetes, it's crucial to monitor your blood sugar levels and make informed food choices.
When it comes to baking, it's all about balance. We can achieve this by using a combination of whole grains, healthy fats, and natural sweeteners. We'll also reduce the amount of sugar and replace some of the flour with almond flour, which is lower in carbs and higher in healthy fats and protein.

Ingredients for Our Diabetes-Friendly Cake
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (60g) almond flour

Preparing the Yogurt Frosting

While the cake is cooling, prepare the frosting. In a small bowl, mix together the Greek yogurt, powdered sugar substitute, and vanilla extract until smooth and creamy. Taste and adjust the sweetness if needed.
Assembling and Serving the Cake

Once the cake has cooled completely, spread the frosting evenly over the top. Slice the cake into wedges and serve. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
