  • 100g caster sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 280g plain flour
  • 1/2 tsp salt

  1. Cream together butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Sift in the flour and salt, then mix until just combined. Be careful not to overmix.
  4. Divide the dough into four equal pieces. Roll each piece into a long, thin cylinder about 1.5cm in diameter.
  5. Wrap each cylinder in clingfilm and chill for at least 2 hours, or up to 24 hours.
  6. Preheat your oven to 180°C (160°C fan) or 350°F. Line a baking sheet with parchment paper.
  7. Unwrap the dough cylinders and cut them into 5cm pieces. Place the pieces on the prepared baking sheet, leaving a little space between each.
  8. Bake for 12-15 minutes, or until the cookies are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
