Delicious Gluten-Free Ginger Cake: A UK Twist

Embarking on a gluten-free journey doesn't mean you have to wave goodbye to your favourite treats. This gluten-free ginger cake recipe, with a delightful UK twist, is here to prove that you can still enjoy moist, spicy, and comforting cakes that are also kind to your tummy.

Why Ginger Cake?
Ginger cake is a classic British dessert that's perfect for any occasion. It's warm, spicy, and has a unique depth of flavour that comes from the combination of ginger, molasses, and treacle. Plus, it's incredibly moist and keeps well for days - if it lasts that long!

But what if you're gluten-intolerant or following a gluten-free diet? Fear not! This recipe uses gluten-free flour to create a cake that's just as delicious as its traditional counterpart.
Ingredients: A Gluten-Free UK Pantry Staple

This recipe uses a blend of gluten-free flours, which you can find in most UK supermarkets. The combination of brown rice flour, tapioca starch, and xanthan gum creates a texture that's closest to wheat flour. Here's what you'll need:
- 225g gluten-free brown rice flour
- 100g gluten-free tapioca starch
- 1 tsp xanthan gum
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp ground ginger
- 1 tsp mixed spice
- 1/2 tsp salt
- 225g unsalted butter, softened
- 225g light brown sugar
- 4 medium eggs
- 120ml black treacle
- 120ml golden syrup
- 240ml milk (dairy or plant-based)
Method: Baking Gluten-Free Ginger Cake

Now that you've gathered your ingredients, it's time to preheat your oven to 180°C (160°C fan) or Gas Mark 4. Grease and line a 23cm round cake tin with parchment paper.
The method for this gluten-free ginger cake is similar to traditional recipes. First, cream the butter and sugar until light and fluffy. Then, beat in the eggs one at a time, followed by the treacle and golden syrup. In a separate bowl, combine the dry ingredients, then fold them into the wet mixture, alternating with the milk.
Pour the batter into your prepared tin and smooth the top with a spatula. Bake for 35-40 minutes, or until a skewer inserted into the centre comes out clean. Leave the cake to cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely.

Storage and Serving Suggestions
This gluten-free ginger cake keeps well for up to 5 days in an airtight container at room temperature. It's also freezer-friendly - simply wrap slices in clingfilm and freeze for up to 3 months.

Serve this cake with a dollop of clotted cream or a generous helping of custard for a true UK experience. It's also delicious on its own, with a cup of tea or coffee.
