Creating the Passion Fruit Curd

Begin by whisking together the passion fruit pulp, lemon juice, zest, sugar, and eggs in a large bowl until well combined. Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. This should take around 10-15 minutes. Remove from heat and stir in the softened butter until melted and fully incorporated.

Preheat your oven to 180°C (160°C fan) and grease and line your cake tins. In a large bowl, cream together the butter and sugar until light and fluffy. Gradually add the eggs, mixing well after each addition. Sift in the flour and baking powder, then gently fold into the mixture, adding the milk to loosen the batter.

Divide the batter evenly between the prepared tins and smooth the tops with a spatula. Bake for 25-30 minutes, or until a skewer inserted into the centre of the cakes comes out clean. Leave the cakes to cool in the tins for 5 minutes, then turn out onto a wire rack to cool completely.

Assembling the Cake

Once the cakes are completely cool, spread a layer of passion fruit curd onto one cake and sandwich with the second cake. Dust with icing sugar and serve with a dollop of whipped cream or a side of fresh berries for a stunning finish.

This Passion Fruit Curd Cake is a delightful blend of tart and sweet, perfect for afternoon tea or a special occasion. Enjoy the tropical flavours and impress your guests with your culinary prowess!
