Parmesan Herb Crusted Baked Cod

Flaky cod fillets baked with a flavourful Parmesan and herb crust, offering a quick and easy weeknight dinner.

  1. Preheat oven to 200°C. Lightly grease a baking dish.
  2. In a bowl, combine the grated Parmesan cheese, breadcrumbs, chopped parsley, thyme leaves, minced garlic, lemon zest, 2 tablespoons of olive oil, salt, and black pepper. Mix well to form the herb crust.
  3. Place the cod fillets in the prepared baking dish.
  4. Spoon the Parmesan and herb mixture evenly over the top of each cod fillet, pressing gently to adhere.
  5. Drizzle the remaining 1 tablespoon of olive oil over the fish.
  6. Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and the crust is golden brown. Cooking time will vary depending on the thickness of the fillets.
  7. Squeeze fresh lemon juice over the baked cod before serving. Serve immediately with your favorite sides, such as roasted vegetables or a fresh salad.
