Parmesan Herb Crusted Baked Cod
Flaky cod fillets baked with a flavourful Parmesan and herb crust, offering a quick and easy weeknight dinner.
Ingredients
- 600g cod fillets, skinless
- 50g Parmesan cheese, finely grated
- 30g breadcrumbs, fresh
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 1 lemon, zested and juiced
- Salt and black pepper to taste
Instructions
- Preheat oven to 200°C. Lightly grease a baking dish.
- In a bowl, combine the grated Parmesan cheese, breadcrumbs, chopped parsley, thyme leaves, minced garlic, lemon zest, 2 tablespoons of olive oil, salt, and black pepper. Mix well to form the herb crust.
- Place the cod fillets in the prepared baking dish.
- Spoon the Parmesan and herb mixture evenly over the top of each cod fillet, pressing gently to adhere.
- Drizzle the remaining 1 tablespoon of olive oil over the fish.
- Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and the crust is golden brown. Cooking time will vary depending on the thickness of the fillets.
- Squeeze fresh lemon juice over the baked cod before serving. Serve immediately with your favorite sides, such as roasted vegetables or a fresh salad.
