Everything Bagel Avocado Toast with Poached Eggs

Delicious and easy poached eggs with creamy avocado toast, seasoned with everything bagel spice. A perfect brunch or light meal.

  1. Fill a saucepan with about 7.5cm of water and bring to a simmer. Add the vinegar.
  2. While the water is heating, prepare the avocado toast. Toast the sourdough bread to your desired level of crispness.
  3. While the bread is toasting, mash the avocado in a bowl with salt and pepper.
  4. Spread the mashed avocado evenly over the toasted bread slices. Sprinkle with everything bagel seasoning.
  5. Once the water is simmering gently, crack each egg into a separate small bowl.
  6. Create a gentle whirlpool in the simmering water with a spoon. Carefully slide one egg into the center of the whirlpool, then repeat with the second egg.
  7. Poach the eggs for 3-4 minutes for a runny yolk, or slightly longer for a firmer yolk. Use a slotted spoon to carefully remove the poached eggs from the water.
  8. Place one poached egg on top of each slice of avocado toast. Drizzle with a touch of olive oil, and garnish with red pepper flakes if desired. Serve immediately.
