Everything Bagel Avocado Toast with Poached Eggs
Delicious and easy poached eggs with creamy avocado toast, seasoned with everything bagel spice. A perfect brunch or light meal.
Ingredients
- 2 large eggs
- 1 ripe avocado
- 2 slices sourdough bread
- 1 tablespoon white vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon everything bagel seasoning
- 1 tablespoon olive oil
- Optional: Red pepper flakes for garnish
Instructions
- Fill a saucepan with about 7.5cm of water and bring to a simmer. Add the vinegar.
- While the water is heating, prepare the avocado toast. Toast the sourdough bread to your desired level of crispness.
- While the bread is toasting, mash the avocado in a bowl with salt and pepper.
- Spread the mashed avocado evenly over the toasted bread slices. Sprinkle with everything bagel seasoning.
- Once the water is simmering gently, crack each egg into a separate small bowl.
- Create a gentle whirlpool in the simmering water with a spoon. Carefully slide one egg into the center of the whirlpool, then repeat with the second egg.
- Poach the eggs for 3-4 minutes for a runny yolk, or slightly longer for a firmer yolk. Use a slotted spoon to carefully remove the poached eggs from the water.
- Place one poached egg on top of each slice of avocado toast. Drizzle with a touch of olive oil, and garnish with red pepper flakes if desired. Serve immediately.
