Reasons against undermount is risk of chipping (I use heavy cookware) and dirt/mould/scum accumulating between stone and sink. I prefer overmount simply from a cleaning perspective. Undermount is cleanest, and easier to work with, as another user said can just wipe everything straight into the sink.
The types of adhesives that are used to hold the sinks on don't have any issues. Only time you want a drop in sink is if the benchtop surface is melamine or laminate, eg susceptible to water damage. We replaced overmount with undermount when updating the counter - installation was petty easy - just a few extra braces, and some silicone to glue the sink to the underside of the slab.
Totally worth it for the ability to sweep the counter right into the sink, and to not have to recaulk the overmount every few years.
