Baby Vegeta Ki Color

The first few episodes of the anime that depicted Vegeta were animated prior to his first colored appearance within the manga, and Toriyama had yet to give Toei Animation the color schemes for either him or Nappa.

Although it may actually be because when Vegeta first appeared as the first big baddy in the series his Ki was blue and purple to contrast with Goku who was often associated with the color red (especially in Kaio-Ken) I guess they just kept his Ki blue for continuities.

Due to his complete lack of focus and ever-increasing rage, Baby Vegeta finds himself unable to get the better of the Super Saiyan 4, who takes this opportunity to use a Ki Blast to blow off Vegeta's tail, reverting him to a battered Super Baby Vegeta.

I think this, in universe, is why Ki changes color. Vegeta went from having an evil heart, his Ki being purple, to being bad, but less for the sake of evil and more for his own self interests, his Ki was white, to finally being a good guy, his Ki turning blue.

His eyes also change color from red to blue. After taking over Vegeta, he shares Vegeta's physical traits though as he evolves, more of Baby's physical traits come through such as his eyes, as well as his shoulder pads. The merging of the two also causes Baby Vegeta to have white hair as opposed to the usual black or gold.
