Colors are just a way to distinguish players clans. If you see players in the same color, they are in the same clan. If horse has color it was used by player with that clan color. Colors are client side so your teamate migh see different color than you.

The different colors are different clans. Whatever you have as a default npc outline means that the horse is unclaimed by any clan on the server. Seeing a horse of any other color means that a member of a clan sat on it. If it's the color that is set to mean friendly (aka apart of your clan), then you or a clanmate sat on that horse at some point.

Horses can be ridden by players. It is a much faster method of transportation than walking or Wolf Form. While riding, you can use Caves. Non-dominated Horses require sustenance in the form of Plant Fibre to survive. To feed a horse, open the inventory menu while near a horse to open its UI. There you'll find 3 slots that can be filled with Plant Fibre, the amount depending on your server's.
