Bath is a good day trip, but it's small and not much to do beyond first day. It is beautiful though and has some great pubs. Also might be different now thanks to COVID travel restrictions but it's tourist central during warmer months and very busy.
Brighton is more for the nightlife and beach really so whatever you're after. Both are worth. Both are very different places - I suggest you have a look at the individual tourist information websites for Brighton and Bath, or read some guide books to see which you prefer to visit.
It will be me, my wife, and our two daughters who will 6 and 10. We have one week (7 or 8 nights), and would like to visit Bath and Brighton in addition to London. Would we be able to see the highlights of one or both of these on a day trip from London, or would we be better off staying overnight?

Although I love Brighton I think it is more of a summer destination. Bath is a superb (and probably the most popular) choice for a day trip from London as it is only 90 minutes on the train and there is plently there to fill in a day. Other small towns that are closer than Bath that I personally enjoy are Winchester and St Albans, the history in both places is amazing.
