Maybe because Zoro trained for 2 years in a gloomy and dark place, it made his skin white. Like Robin, she is tanned back in Alabasta, a desert, but she got a whiter skin after she had gone in Baltigo for 2 years. Robin's (and Zoro's) tan was only a thing in the anime, in the manga (colored manga, volume covers and color spreads) she is white.

They "fixed" this after the timeskip. Robin Zoro and Franky spent their time on islands with colder weather and where the sun doesn't show much so maybe that's why their tans faded away.
