Red Velvet Zencefilli Kurabiye: A Mouthwatering Twist on a Classic Turkish Cookie

In the vibrant world of Turkish cuisine, cookies, or "kurabiye," hold a special place. One such delight is the Zencefilli Kurabiye, a buttery, orange-scented treat that's been a staple in Turkish bakeries for generations. Now, imagine infusing this classic with the rich, velvety charm of red velvet. Welcome to the world of Red Velvet Zencefilli Kurabiye, a cookie that's as stunning to look at as it is divine to taste.

Understanding Zencefilli Kurabiye
Before we dive into the red velvet version, let's first understand the original Zencefilli Kurabiye. Translated to "orange peel cookies," these treats get their unique flavor from the addition of orange zest. The dough is typically made with butter, sugar, flour, and eggs, with a touch of baking powder for lift. Once baked, the cookies are dusted with powdered sugar, creating a simple, yet elegant finish.

Introducing Red Velvet
Red velvet, a beloved flavor in Western desserts, is known for its tender crumb and vibrant color. The secret to its hue lies in a combination of red food coloring and a chemical reaction between the cocoa powder and buttermilk or vinegar. When these ingredients combine, they create a beautiful, deep red color that's perfect for holidays or any day you want to add a pop of color to your baking.

Combining Two Classics: Red Velvet Zencefilli Kurabiye
To create Red Velvet Zencefilli Kurabiye, we're essentially merging the best of both worlds. We'll keep the buttery, orange-scented dough of the Zencefilli Kurabiye, but we'll add cocoa powder, buttermilk, and red food coloring to give it that signature red velvet hue. The result is a cookie that's as delicious as it is beautiful, with a tender crumb, a hint of orange, and a touch of chocolate.
Ingredients and Equipment

- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tablespoon orange zest
- 2 cups (240g) all-purpose flour
- 1/4 cup (20g) unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 cup (60ml) buttermilk
- Red food coloring (optional)
- Powdered sugar, for dusting
- Stand mixer or electric mixer
- Mixing bowls
- Silicone baking mat or parchment paper
- Baking sheet
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with a silicone mat or parchment paper.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the orange zest.
In a separate bowl, combine the flour, cocoa powder, and baking powder. Gradually add this dry mixture to the wet ingredients, alternating with the buttermilk, until just combined. If desired, add a few drops of red food coloring for a more vibrant hue.

Using a cookie scoop or spoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the cookies generously with powdered sugar before serving. Enjoy your Red Velvet Zencefilli Kurabiye!
