Ingredients Quantity
Dried figs 300g
Ground almonds 150g
Plain flour 100g
Baking powder 1 tsp
Baking soda 1 tsp
Salt 1/2 tsp
Cinnamon 1 tsp
Nutmeg 1/2 tsp
Cloves 1/4 tsp
Orange zest Finely grated zest of 1 orange
Orange juice 150ml
Honey 100ml
Eggs 3
Vegetable oil 100ml

  1. Preheat your oven to 180°C (160°C fan) and grease and line a 23cm round cake tin.
  2. Roughly chop the dried figs and place them in a food processor. Pulse until they're coarsely chopped.
  3. Add the ground almonds, flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves to the food processor. Pulse until well combined.
  4. In a separate bowl, whisk together the orange zest, orange juice, honey, eggs, and vegetable oil.
  5. Pour the wet ingredients into the food processor with the dry ingredients. Pulse until just combined.
  6. Transfer the batter to the prepared cake tin and smooth the top with a spatula.
  7. Bake for 40-45 minutes, or until a skewer inserted into the center of the cake comes out clean.
  8. Leave the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
