Making the Dough

Step 1: Combine Dry Ingredients

In a large bowl, combine 500g of strong white bread flour, 1 tsp of instant yeast, 1 tsp of fine salt, and 50g of granulated sugar.

Step 2: Add Fat and Liquid

Rub in 100g of lard until the mixture resembles fine breadcrumbs. Gradually add 300ml of warm water, mixing until a soft dough forms.

If using a stand mixer, use the dough hook attachment to combine the ingredients. Knead for about 5 minutes until the dough is smooth and elastic.

Add the yeast to the milk and stir. Leave it to stand for 10 minutes to allow the yeast to activate. 2. Put the flour in to the mixing bowl, add in  Salt, Sugar, Vitamin C, and warmed Shortening / Butter and mix well on 1st speed.  3. Make a well in the centre of the mixture. Add in the beaten egg, milk and yeast  4. Mix on 1st  speed for around 9 mins and then 1 min on 2nd speed 5. Place the dough in a  bowl and cover for 5 mins 6.  Mould up the dough on work top rest for 10 mins 7.  floured work surface and roll into a rectangle about 20x50cm/8x20in and about ½cm thick.  8. Dot a third of the remaining lard and a third of the lard over the surface of the dough. Scatter over a third of the fruit and a third of the sugar. Fold the top third of the dough down and the bottom third up so that the dough is folded in three and roughly square. Turn the dough a quarter turn. Roll out and repeat the out process twice more, to use up all the lard and fruit. 9. Best size tray for lardy 22 x 32 cm x 4cm deep, line bottom of tin with baking parchment. Roll out the Line dough to fit the tin and place it inside. Cover with cling film, or place inside a large plastic bag, and leave to rise for 30 - 60 minutes.
