I like a little bit of heat. And the pickled actually offers a nice acidity given the fact that it's pickled and now I'm just going to add a couple dollops of refried beans just sort of like going through the entire thing doesn't have to be you know in any specific order so we've reached that point I'm going to take this and put it in the oven at 400 degrees Fahrenheit for roughly 5- 10 minutes, making sure to keep an eye on it because we don't want the cheese burning we don't want anything getting super smokey so as soon as it starts to melt and get bubbly we don't see any raw cheese left we're going to take it out and pour over a plate of nachos. Now for the pico the gallo super easy. I got some seeded and diced tomatoes. Uh I also have some diced onions. Okay. Now I like my I like my pico the gallo to have a little bit of flavour and texture as well. So this is basically what how you would make it regularly. Okay I got a little bit of chopped cilantro over here. I know a lot of people can't eat cilantro. That's okay. I'm not judging you. Don't let anyone else judge you as well. And then I'm going to add some lime juice to that. And salt and a little bit of black pepper. Now, if you like it like this, you're good to go. Just mix it up but I like adding a little bit of cumin to mine. It adds a little bit more flavor and that's what I'm here for, okay? I'm here for more flavor all the time. More flavor, more everything. Just going to mix that up. And then the more you let this sit, the more the flavors kind of combine, they get familiar with one another and like I said, this is going to be going on top of the cooked nachos. So, you don't really want to put this in the oven, right? That would be a different situation. Give it a taste and see where we're at, okay? Wow. I don't know man. It's the it's the cumin for me. I really like how that lends its flavor to a fresh pico. The best part about pico the gallo is you can put it on eggs. You can put it on tacos. You can put it on nachos. This is good to go. Alright you're going to want to get yourself some like robust tortillas. When I say that what I mean is you don't want to get those tostitos. You could if you don't have any other option but the thicker the tortilla chip, the more likely it's going to be able to grab as many ingredients as possible. Last thing you want to do is grab your tortilla chip and have it break, right? So, I'm just adding some tortillas to this plate and then, we're going to cover the entire thing in our sliding ingredients. They're ready to go. Let's just slide all on. Oh my goodness. Oh my goodness guy. What? If this doesn't tickle your fancy, I don't know if we could be friends. Look at how delicious that looks. Holy cow. Wow. Let it drip off the back. That is insane looking guys. We're definitely not done yet. Let's just clean that up a bit. Push it on top. Maybe I should've used the bigger plate but here we are. Okay so now what we do is Now, we sprinkle on, we add a couple of dollops of Right? Hit it with some of this pico the gallo obviously. It's our fresh-made pico. It's going to add a little bit of freshness to this entire thing. And then last but not least some sour cream. That's right. You gotta hit it with some sour cream. This is quite the dish here. Look at how great that looks. Right? Whoo. I don't even know where to start. Let's just let's just go in on it, right? Yeah. That is going to be some bite. I can't eat all that guac right now. Let's just quickly do that. Alright so this entire thing was made on one pan. We got nachos. We got chorizo. We have refried beans, pickled jalapenos, pico the gallo, sour cream and guacamole. Best part about this recipe is you just prep the pan. So, when people come over, you throw it in the oven and then you're good to go. Now, the problem is, I have an entire plate of nachos and all I want to do is eat it. Problem? Or perk.
