For some early parts of the manga the scans I can find are a little fuzzy in the quality, but the colored has good quality the whole way through. But I feel one piece was meant to be read in black and white. Which should I do? The colored definitely looks better in mostly all the cases but sadly the digital colored volumes/chapters don't have the sbs pages which is at the end of each chapter where Oda answers fan questions and theories and more detailed information on manga.

For one piece, oda jam packs a bunch of stuff in there but still manages to make it coherent and readable so I never have an issue with it. A manga like jojos on the other hand is virtually impossible to read black and white because it's cluttered and doesn't know how to handle it. Anyway, it depends.
If the colorings is just "fanart" coloring (like what OPScans did for chapter 1081 where they colored the whole chapter itself) then I wouldn't really like it as some of the panels got ruined due to bad coloring mixed. If it's official coloring like the OP colored manga then that one. I have not read too much of the digital colored version, so I can not say how accurate the translations are, but I highly recommend reading it in black and white.

I'm too used to the black/white look and some colored versions could look weak and soulless af in comparison.
