  • 1/2 cup apple cider vinegar
  • 1/4 cup dried apricots
  • 1/4 cup prunes
  • 1/4 cup dried cherries
  • 1 large onion, roughly chopped
  • 4 cloves garlic, peeled
  • 1-inch piece cinnamon stick
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp Mexican oregano
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • 1 tsp ground anise
  • 1 tsp ground star anise
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground mace
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 4 cups chicken or beef broth

Preparing the Beef

Season the beef chunks with salt and pepper. In a large Dutch oven, sear the beef over medium-high heat until browned on all sides. Remove the beef from the pot and set aside. In the same pot, add the onion and garlic, and cook until softened. Deglaze the pot with a splash of water or broth, scraping up any browned bits from the bottom.
