Smoking Frozen vs Thawed Meat Experiment

In this video, I'm testing how frozen vs thawed meat will cook and taste on the smoker. I use a chuck roast that is cut in half.

Smoking from frozen can work in a pinch with the right cuts and the right approach — but thawing is almost always the better, safer, tastier path. Nine times out of ten, meat that started thawed is going to beat meat you cooked straight from the freezer.

Today I made some venison snake sticks with some beef fat. But when I weighed all the meat together, to figure out how much pink cure I needed some was still partially frozen . Did I mess on the by not letting all the meat thaw or will it be fine.i had 8.6 pounds of meat and used 9.75 grams of cure.

As the frozen meat begins to thaw in the smoker, the surface temperature enters the danger zone, providing an ideal environment for bacteria to multiply rapidly. Based on my experience freezing and smoking meats , the answer to the question "Can you smoke frozen meat " is, always thaw before smoking . If the meat is still rock-solid frozen , that's a no-go! The thing is, if you smoke meat that's still deep in the frost zone, you're asking for trouble.
