Potatoes Have White Spots. Potatoes tend to develop dark spots in various cases, but it doesn’t always mean they are spoiled. Potato tubers are enlarged underground stems.

The potatoes are perfectly edible despite the white spots looking like a bad dose of potato acne! It’s not all good news though. A white “knot,” basically a bruise that didn’t turn dark colors, as bruises typically do.

Lenticels are small openings in the tuber surface that allow for gas exchange. Potato tubers are enlarged underground stems. In addition, mold could look or smell rotten. Saturated soils may cause the lenticels to swell as gas exchange is impeded.
