M5 3.8: It is like the 3.6, but better. Definitely faster than a 540i. Has more torque than the 3.6, especially at low rpm.

Conclusion: If you don't mind the maintenance cost, then get a M5 3.8. If you do, than get a 540i 6-speed. I wouldn't bother with the 3.6, because it is not any faster than the 540i.
