BLACKENED SALMON, SWEET POTATO FRIES, AND ROASTED BRUSSEL SPROUTS

 

 

Is there anything better than a buttery, melt in the mouth fillet of Salmon. It’s one of those foods that I am so grateful falls into the healthy category! Packed with protein, Omega-3 fatty acids to help joints and reduce inflammation, as well as a wealth of vitamins and minerals, it truly is a superfood! It is also extremely versatile….have it cooked or raw, even smoked! And it works with so many different herbs and spices too. But my absolute favourite has to be Blackened Cajun Salmon. This combination of spices allows the Salmon to char quickly on the outside, and stay buttery on the inside. I prefer to use a skinless and boneless fillet for this. And a griddle pan, but a skillet is also fine. As long as it’s HOT!

For nutritional balance, I’m pairing the Salmon with Sweet Potato Fries and Roasted Brussel Sprouts. I know they’re not everyones favourite vegetable….they weren’t mine when I’d only tried them boiled. But roasted, they’re like a whole new vegetable! But if you’re a hater and nothing will change your stance, I understand! Broccoli or Asparagus are great substitutes!

This one is great for meal prep as it re-heats well, and quickly too. The only quality lost when re-heated is the crispiness of the fries, but they still taste great! If you really can’t stand your fries a little softer, then feel free to make Sweet Potato Mash instead!  This would be perfectly followed by my Key Lime Pie Wonder Whip!
