If the root hits a hardpan or a shallow bedrock, it will often bolt sideways, creating forked roots rather than the smooth, single taproot you were hoping for.

Water management is a double-edged sword for root development. Inconsistent moisture is one of the primary causes of small, woody, or cracked roots. When soil swings between extreme dryness and heavy saturation, the plant struggles to regulate its water uptake. During dry spells, the plant prioritizes survival over growth, halting the expansion of the root to conserve resources. Conversely, waterlogged soil displaces oxygen, essentially suffocating the roots and causing them to rot rather than expand.
Consistency is Key
Establishing a consistent watering schedule that provides deep, infrequent soaking encourages roots to grow downward in search of moisture. Mulching around the plants helps retain that crucial moisture and keeps soil temperatures stable. A steady environment allows the plant to invest its energy into storage rather than stress response.

Nutrient Imbalances and Feeding Frenzy
It is tempting to assume that more fertilizer equals bigger vegetables, but roots are particularly sensitive to nutrient imbalances. An excess of nitrogen, for example, will promote lush green foliage at the expense of root development. The plant focuses on leaf production because it is the easiest way to capture energy, leaving the roots small and underdeveloped. Conversely, a true deficiency in phosphorus or potassium can limit the energy transfer and storage necessary for root growth.

Rather than guessing with a general-purpose fertilizer, the most effective strategy is to conduct a soil test. This will reveal exactly what your ground is lacking or overabundant in. Competition and Genetics
Finally, one must consider the botanical competition happening underground.
