Unsalted butter (softened) 225g

Instant coffee granules 2 tsp
Milk 4 tbsp
Vanilla extract 1 tsp
Baking powder 1 tsp

  • 2 x 20cm round cake tins
  • Electric mixer or wooden spoon
  • Sieve
  • Mixing bowls
  • Teaspoon and tablespoon measures
  • Cooling rack

Method: How to Make Your Coffee Sponge Cake

Preheat your oven to 180°C (160°C fan) and grease and line your cake tins. In a large bowl, cream together the softened butter and caster sugar until light and fluffy. This should take around 3-5 minutes with an electric mixer or 5-7 minutes by hand.

Beat in the eggs, one at a time, adding a spoonful of flour with each egg to prevent curdling. Fold in the remaining flour, baking powder, and a pinch of salt. Dissolve the instant coffee granules in the milk and add this to the mixture along with the vanilla extract. Mix everything together gently until just combined.

Divide the mixture evenly between your prepared cake tins and smooth the tops with a spatula. Bake for 20-25 minutes, or until a skewer inserted into the centre of the cakes comes out clean. Leave the cakes to cool in the tins for 5 minutes, then turn them out onto a wire rack to cool completely.
