If I can do it, you can too! These chicken shawarma skewers are so flavorful and delicious. They can be served alone or with tzatziki and a warm pita (my favorite!). I linked all my grilling essentials, so if you want them, just comment GRILLING and I will send them to you now via DM. CHICKEN SHAWARMA 2 1/2 Ibs boneless, skinless chicken thighs, cut into bite-sized pieces 1 cup plain greek yogurt 3 cloves garlic, mashed 1 tb cumin 1 tb turmeric 2 tsp coriander 1 tb paprika 1/2 tsp cayenne pepper 1/2 tsp cardamon (optional) 2 tsp kosher salt 1/2 tsp ground black pepper TZATZIKI 1 cup greek yogurt 2 persian cucumbers, grated 3 cloves garlic, mashed 1 lemon, juiced 1/3 cup fresh mint 1 tb dried dill 1/2 tsp kosher salt ETC. Pita bread, warmed on the grill 1 cup baby tomatoes, halved 3 to italian parsley, chopped First, cut chicken into bite-sized pieces and place in a large bowl. Add the yogurt and seasonings. Coat well and marinate in the refrigerator for at least 30 minutes. If you don’t want to wait, you can get grilling right away! Heat the grill to 50OF. Skewer the chicken, packing the chicken closely together. Once the grill is HOT, add the chicken skewers and close the grill. Do not disturb them for ~ 10 minutes. Open the grill cover and rotate the chicken to the other side. If the chicken sticks, they are not ready to be flipped. Once they have been flipped, cook another 8-10 minutes, or until cooked through (165F). While the chicken is on the grill, add the pitas to warm, about 1-2 minutes on each side, then remove from the heat. Remove the chicken from the grill and let cool. Meanwhile, make the tzatziki. Add the yogurt to a bowl, along with the cucumbers, garlic, lemon, mint, dill and salt. Mix and adjust seasonings as needed. Spread tzatziki onto the warm pita, then the chicken, then garnish with tomatoes and parsley.
