The magic of this powdered stabilizer lies in its composition, which is specifically crafted to eliminate the guesswork from meringue making. Unlike relying solely on fresh egg whites, this product incorporates stabilizers and processing aids that ensure reliable foam development. This scientific approach guarantees that the proteins bond correctly, providing the structural integrity needed for intricate desserts.

Ingredients 110g (about 1 cup) almond flour, finely ground 200g (about 1 2/3 cups) powdered sugar, sifted 90g (about 3 large) egg whites, room temperature 50g (about 1/4 cup) granulated sugar Pink gel food coloring, a few drops (optional) 115g (1/2 cup) unsalted butter, softened 150g (1 1/4 cups) powdered sugar, sifted 60g (about 1/3 cup) fresh strawberries, mashed and strained 1 tsp rose water 1/2 tsp vanilla extract INSTRUCTIONS 1. Bring egg whites to room temperature about 1 hour before starting. Sift almond flour and powdered sugar together twice and set aside. 2. Line two baking sheets with parchment paper or silicone mats. 3. Beat egg whites on medium speed until foamy (1-2 minutes). Gradually add granulated sugar while beating on high until stiff, glossy peaks form (5-7 minutes). Add pink gel food coloring and mix gently. 4. Gently fold almond flour and powdered sugar mixture into the meringue using a spatula until batter flows slowly off the spatula in thick ribbons. Avoid overmixing or undermixing. 5. Transfer batter to a piping bag fitted with a 1/2 inch round tip. Pipe 1.5-inch circles onto prepared baking sheets, spacing about 1 inch apart. Tap baking sheets firmly against the counter to release air bubbles. 6. Let piped shells rest at room temperature for 30-60 minutes until a dry skin forms on top. 7. Preheat oven to 300°F (150°C). Bake one sheet at a time on the middle rack for 15-18 minutes, rotating halfway if needed. Macarons should lift easily and develop feet. 8. Cool shells on baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Beat softened butter until creamy. Gradually add powdered sugar, then fold in strawberry puree, rose water, and vanilla extract. Adjust rose water to taste. 9. Pair shells of similar size. Pipe a small dollop of buttercream onto one shell and sandwich with its partner. Press gently to spread filling evenly. 10. Refrigerate assembled macarons in an airtight container for 24 hours to mature flavors and soften shells.e | Facebook
