Sparkling Pans: How to Clean with Baking Soda & Lemon

Logan Jun 01, 2026

Burnt-on grease and stubborn food residues can make cleaning a pan feel like an uphill battle. Fortunately, you likely have the perfect natural cleaning duo already in your pantry: baking soda and lemon. This combination leverages the gentle abrasiveness of baking soda and the powerful degreasing, deodorizing properties of citric acid to restore your cookware to a like-new shine without the need for harsh chemicals.

The Science Behind the Scrub

Understanding why this method works makes the process feel less like a chore and more like a satisfying hack. Baking soda, or sodium bicarbonate, is a mild alkali that acts as a gentle abrasive. It helps lift stuck-on particles from the metal or ceramic surface without scratching it. When you introduce lemon juice, you add citric acid, which reacts with the baking soda to create a mild fizzing action. This effervescent reaction helps to break down tough, baked-on grime and eliminates unpleasant cooking odors, leaving your pan fresh and ready for its next use.

Gathering Your Supplies

Preparation is key to an efficient cleaning session. You do not need a cabinet full of specialized cleaners; just a few simple ingredients will do. The goal is to create a effective paste that clings to the surface of your pan.

What You Will Need

  • Baking soda (the primary cleaning agent)
  • Fresh lemon juice (or lemon slices for a more tactile approach)
  • Warm water to create the paste and aid in rinsing
  • A non-abrasive sponge or dishcloth for scrubbing
  • A rubber glove to protect your hands from the alkaline nature of the paste

Step-by-Step Cleaning Process

To achieve the best results, it is important to apply the paste correctly and allow the chemical reaction to do its work. Rushing this process will reduce its effectiveness.

  1. Cool the Pan: Never attempt this on a hot pan. Let it cool completely to avoid warping the metal or causing the cleaning solution to evaporate too quickly.
  2. Create the Paste: In a small bowl, mix ¼ cup of baking soda with enough fresh lemon juice to form a thick, spreadable paste. You want a consistency similar to toothpaste.
  3. Apply Evenly: Generously coat the stained or burnt areas of the pan with the paste. For extra stuck-on areas, you can place a few lemon slices directly on the spot and sprinkle baking soda over them.
  4. Let it Sit: This is the most crucial step. Allow the paste to sit for a minimum of 15 to 30 minutes. The longer you let it rest, the more time the citric acid has to break down the grime.
  5. Scrub Gently: After the waiting period, wet your sponge and gently scrub the surface. You should see the grime lifting easily.
  6. Rinse Thoroughly: Wash away all residual baking soda and lemon pulp under warm running water.

Tackling Specific Types of Stains

Not every pan is created equal, and different types of residue require slightly different approaches. Here is how to adapt the baking soda and lemon method for common scenarios.

For Burnt or Scorched Pots

If you have left a pot of soup or sauce to boil dry, fill it with water and add a generous amount of baking soda. Squeeze the juice of one or two lemons into the water and bring it to a simmer for 10-15 minutes. The heat combined with the cleaning agents will loosen the carbonized mess, making it easy to wipe away with a sponge.

For Cast Iron Cookware

While you should never use soap on a traditional cast iron skillet, the baking soda and lemon method is actually safe for *seasoned* cast iron. Use it sparingly to remove stuck-on bits. Create a thin paste, apply it to the affected area, and scrub gently. The acid in the lemon will help clean the surface, but you must rinse and dry the pan immediately and re-oil it with a thin layer of fat to protect the seasoning.

Drying and Maintenance

The final step in the cleaning process ensures your hard work is not undone by water spots or rust. Proper drying is just as important as the cleaning itself.

Once you have rinsed the pan completely, dry it immediately and thoroughly with a clean towel. To prevent any potential rusting, especially on carbon steel or cast iron, place the pan back on the stove over low heat for a minute or two. This will evaporate any lingering moisture. Once dry, if you are storing the pan away, consider placing a paper towel inside to absorb any humidity that might accumulate in the cupboard.
