These effects are a red aura (in Luffy's case) a green flame-like aura (in Sai 's case), and a steam-like aura (black and purple for Zoro, Fujitora, Sanji, The Marines, purple for Kin'emon; and pink for Kanjuro). Also, when used to cover the whole body, users' Haki gets a purple luster instead of regular gray. Taking the silver medal on my Straw Hat Pirates Ranking, we have Sanji, easily one of my favorites from the entire series!

In the same way, I was confused until after the timeskip why Usopp's colour was yellow and not the dirt green or brown. Now it makes much more sense. It's hilarious, Oda drew the strawhats germa 66 style on the chapter cover of chapter 872, and imo everyone's colour looks totally fine except Sanji looking super out of place in blue.
