Preserving the Taste of Summer: Canning Grape Leaf Pickles
Canning grape leaf pickles is a delightful way to capture the essence of summer and enjoy it year-round. This traditional recipe, often associated with Mediterranean and Middle Eastern cuisines, transforms humble grape leaves into tangy, briny treats that are perfect as meze or appetizers. Here's a comprehensive guide to help you master the art of canning grape leaf pickles at home.
Understanding Grape Leaves and Brine
Grape leaves, especially those from unsprayed vines, are the ideal wrapper for these pickles. They impart a subtle, unique flavor and maintain their vibrant green color even after processing. For the brine, a balanced mix of vinegar, water, salt, and sometimes sugar or spices creates the perfect pickling environment.
Choosing and Preparing Grape Leaves
- Select young, tender leaves from the tips of the vine for the best results.
- Wash the leaves thoroughly to remove any dirt or insects.
- Blanch the leaves briefly to soften them and make them more pliable. This also helps maintain their color during the canning process.
Assembling the Grape Leaf Pickles
Once your grape leaves are prepared, it's time to fill and roll them. This step requires patience, but with practice, you'll become quite adept at creating beautiful, uniform pickles.

Ingredients
- 1 large bunch of grape leaves (about 50-75 leaves)
- 1 lb (450g) uncooked short-grain rice
- 1 small onion, finely chopped
- 1/4 cup (60ml) olive oil
- 1/4 cup (60ml) chopped fresh parsley
- 1/4 cup (60ml) chopped fresh dill
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the rice, onion, olive oil, parsley, dill, salt, and pepper.
- Lay a grape leaf flat, vein side up, with the stem end towards you. Place a generous tablespoon of the rice mixture near the stem.
- Fold the bottom of the leaf over the filling, then fold in the sides and roll tightly away from you, creating a cigar-like shape.
- Repeat with the remaining leaves and filling.
Canning the Grape Leaf Pickles
Now that your grape leaf pickles are assembled, it's time to can them for long-term storage.
Ingredients for the Brine
- 2 cups (480ml) white vinegar
- 2 cups (480ml) water
- 1/4 cup (60ml) kosher salt
- 2 tbsp (30ml) granulated sugar (optional)
- 1 tbsp (15ml) black peppercorns
- 1 tbsp (15ml) coriander seeds
- 1 tbsp (15ml) mustard seeds
Instructions
- In a large pot, combine all the brine ingredients and bring to a boil. Reduce heat and let simmer for 10 minutes.
- Pack the grape leaf pickles tightly into clean, sterilized quart-sized mason jars, standing them upright and leaving about 1/2 inch (1.25cm) of headspace at the top.
- Ladle the hot brine into the jars, leaving 1/2 inch (1.25cm) headspace at the top. Remove any air bubbles by sliding a non-metallic utensil along the sides of the jar.
- Wipe the rims of the jars clean, place lids on top, and screw on the bands fingertip tight.
- Process the jars in a boiling water bath canner for 10 minutes, adjusting for altitude if necessary.
- Remove the jars from the canner and let them cool undisturbed for 24 hours. Check the seals; any jars that didn't seal should be refrigerated and used within a few weeks.
Your homemade canned grape leaf pickles will keep in a cool, dark place for up to a year. Once opened, store them in the refrigerator and enjoy within a few weeks. Happy pickling!
