Instructions
Now that you have all your ingredients, let's get cooking!
- Select the Sauté function on your Instant Pot. Add a drizzle of oil, then add the sausage. Cook until browned, about 5 minutes. Remove the sausage and set aside.
- In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables start to soften, about 5 minutes.
- Stir in the diced tomatoes (with juice), chicken broth, Cajun seasoning, paprika, bay leaves, salt, and black pepper. Add the sausage back into the pot.
- Secure the Instant Pot lid and set the valve to "Sealing". Select the Manual/Pressure Cook function, and set the time for 4 minutes at high pressure.
- Once cooking is complete, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to "Venting" to release any remaining pressure.
- Open the lid and stir in the shrimp. Cook until they turn pink and are heated through, about 2-3 minutes.
- Taste and adjust seasoning if needed. Garnish with fresh parsley and serve hot. Enjoy your Instant Pot Shrimp Stew!
