This was the color palette that Vegeta (and Nappa, as his armor isn't quite the same color as it was depicted with when they reached Earth) were originally depicted when first shown, as those first episodes were animated prior to the first full. Vegeta made his appearance in chapter #204 "Sayonara, Son Goku", published in Weekly Shōnen Jump magazine on January 7, 1989, [3] seeking the wish-granting Dragon Balls to achieve immortality.

They didn't have anything to go off of for coloring. It's also why Trunks has purple hair in Z instead of blue. Similarly is Goku's Super Saiyan appearance in Lord Slug, there was nothing to go off of but notes, so the coloring had to figured out by them.

Back when Vegeta first appeared in the saiyan saga, Toei miscolored his armor and hair, giving him a green armor with orange details, plus orange gloves and orange/brown boots.

Also giving the Prince of all Saiyans a reddish/brownish hair, which funnily enough makes its comebacks in the series every now and then, it's not rare to see Vegeta with brown hair, some people. Bulma had purple hair in the manga (hence why Trunks had purple hair). But, the anime had her hair that teal/blue color, but in DBZ they kept Trunks color purple, but then in Super changed it to blue to fit the anime's blue Bulma.

Even weirder, kid Trunks still has purple hair in Super. They should have just kept Trunks hair purple to begin with. when was Vegetas first appearance ever? in what season and episode does Vegeta make his first appearance into dragon ball series?
