Becki's Mac and Cheese from Magnolia Table: A Comfort Food Classic
Nestled in the heart of Waco, Texas, lies Magnolia Table, a charming café owned by Chip and Joanna Gaines. Among the many delightful dishes on their menu, one stands out as a crowd favorite: Becki's Mac and Cheese. This isn't just any mac and cheese; it's a creamy, comforting, and slightly addictive dish that keeps patrons coming back for more. Let's dive into the details of this culinary gem and explore how you can recreate it at home.
What Makes Becki's Mac and Cheese Special?
Becki's Mac and Cheese at Magnolia Table is not your average elbow macaroni in a cheddar cheese sauce. It's a symphony of flavors and textures that sets it apart. Here are some key elements that make this dish special:
- Three Cheese Blend: The sauce is made with a combination of cheddar, mozzarella, and Parmesan cheeses. This blend provides a perfect balance of sharp, mild, and nutty flavors.
- Creamy Sauce: The cheese sauce is velvety smooth, thanks to a roux made with butter and flour, and enriched with heavy cream and milk.
- Crispy Topping: The dish is topped with a mixture of panko breadcrumbs, melted butter, and a touch of garlic powder. This topping adds a delightful crunch that contrasts beautifully with the creamy pasta.
- Secret Ingredient: While the exact recipe is a closely guarded secret, many fans swear by the addition of a pinch of cayenne pepper for a subtle kick of heat.

Ingredients
| Ingredient | Amount |
|---|---|
| Elbow macaroni | 1 lb (450g) |
| Unsalted butter | 1/4 cup (57g), plus more for greasing |
| All-purpose flour | 1/4 cup (32g) |
| Heavy cream | 1 cup (240ml) |
| Whole milk | 1 cup (240ml) |
| Cheddar cheese, shredded | 2 cups (225g) |
| Mozzarella cheese, shredded | 1 cup (115g) |
| Parmesan cheese, grated | 1/2 cup (55g) |
| Salt | 1 tsp (5g) |
| Black pepper, freshly ground | 1/2 tsp (1.25g) |
| Cayenne pepper (optional) | Pinch |
| Panko breadcrumbs | 1/2 cup (40g) |
| Garlic powder | 1/4 tsp (0.6g) |
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch (23x33-cm) baking dish.
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add the flour and whisk to create a roux. Cook for 1-2 minutes, whisking constantly.
- Gradually add the heavy cream and milk to the roux, whisking continuously to prevent lumps from forming. Cook the mixture for 5-7 minutes, or until it thickens enough to coat the back of a spoon.
- Remove the saucepan from the heat and stir in the shredded cheeses, salt, black pepper, and cayenne pepper (if using). Continue stirring until the cheese is completely melted and the sauce is smooth.
- Add the cooked macaroni to the cheese sauce and stir until each piece is evenly coated. Transfer the macaroni and cheese to the prepared baking dish.
- In a small bowl, combine the panko breadcrumbs, melted butter, and garlic powder. Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.
- Bake for 20-25 minutes, or until the top is golden brown and crispy, and the cheese is bubbly and melted. Let the macaroni and cheese rest for 5-10 minutes before serving.
