The Ooni Fyra 12 portable oven pizza oven is lightweight and compact. It can be carried up or down from the roof whenever needed. This is the cheapest model that the company sells. It can be fueled with wood pellets that you put into the hopper at the back. You can't light flames, arrange charcoal or logs or touch a propane tank.

Like the Ooni 3 and the Ooni Karu, the Fyra has a door to help in retaining the heat inside the oven. Its handle is glass-reinforced which keeps it cool-to-touch even if the door gets hot. The door itself doesn’t get in the way once it’s opened – it can hang at the bottom of the opening to make way for you to slide the pizza inside.

The ease of cleanup is something I love about outdoor cooking. Fyra 12's soot buildup is not a common problem (even when the flame is well-oxygenated). You can't clean everything at once. Fyra 12 has two chimneys. One for smoke and the other for pellet loading. They have many removable parts and can all get filthy after being used. The pizza stone can be cleaned easily and needs little else.

You can also cook other things using the Ooni Fyra 12, provided you have cookware that fits inside the oven slot. Ooni provides recipes on its website for things like duck breasts and banana bread, which you cook the same way you would in any wood-fired oven—rotating to give every angle equal time facing the heat source. A tiny cast-iron skillet will work here, but you’ll need to pull the skillet out and rotate the food inside the pan rather than turning the pan itself, since the handle of the skillet will stick out of the oven; Ooni sidesteps this problem by selling its own cast iron skillet that features a removable handle. I think this is fussy (the pan is also a little flimsy and small, IMO), so I will stick to pizza.

Ooni Fyra pizza can be cooked outdoors. This tray will be your base for the fire. When the fire has blazed for about 15 minutes (you can look through the peephole in the oven front to see), you will add more fuel to your pellet feeder to ensure there is always fuel flowing into the fire. A pellet hopper that is full will last for around 15 minutes. The fire must be maintained strong by constantly replenishing it. It is best to not forget about it. If you do, your fire will soon become too cold.

As long as the oven was kept topped-up with pellets, it maintained its temperature well. I was able remove one pizza from the oven, place it back on the door, prepare the next pizza, and just put it in to cook. I didn't have to wait for the oven to heat back up for too long.

The pizza oven arrived in a compact box that was really easy to carry out to the garden. I was impressed by how small the packaging was and couldn’t believe there was an entire pizza oven inside.

In general, pellets have a lot going for them. As mentioned elsewhere, they and they burn very efficiently (though this last point is debatable when cooking at the high temperatures needed for proper pizza-making).

If it did not get crispy, you did a good job doing a neapolitan pizza, because this is not supposed to get crispy but to stay soft. If you want a crispy pizza, go for a 2-3 min bake at 650-700F. The faster you bake, the softer it'll be! 21 May 2020
